Haystacks

    Great, quick fall recipe:

    Haystacks

    6 oz. butterscotch chips
    1 bag chow mein noodles
    1/2 cup peanuts
    2 tablespoons peanut butter

    In a LARGE microwave-safe bowl, melt the butterscotch chips. Stir in peanut butter, then the chow mein noodles and peanuts. Stir until all is well coated. Use two spoons to drop into little piles onto waxed paper. They'll harden in a few minutes. (If the mixture starts to dry out before you've finished making the little "haystacks", zap it in the m/w for 10 seconds or so to soften it up.

    Yummy! Kids love these.

    You can also use chocolate morsels or a combination of chocolate and butterscotch. I've also thrown toffee chips, mini Reese's pieces, mini M&M's, all kinds of stuff into the mixture as well.

    I can't imagine chow mein noodles in a dessert. Why not use shredded coconut instead?

    I don't know--guess you could try it--they would have a whole different consistency. The chow mein noodles are great, though.
