Heat the pan up to medium heat, add about a teaspoon of butter to coat pan. Mix three room temp eggs and pour it into the pan. Lightly scramble for about 5 seconds. Add whatever you want to the eggs, lift the pan and move a spatula around the edge of the omlette to loosen and to drain the excess uncooked eggs on top to the bottom to cook. Let cook for about 10 to 15 seconds. Fold 1/3 of the omlette over then fold the other 1/3 over, slide into a plate and then eat.

That didn’t work with medium heat. After 2 minutes it was still runny in the middle. High heat turns the butter brown. You guys don’t know what you are talking about.

I have a hard time with the egg turning brown, ie...cooking it too long.

I think it's gotta be high (to seer it) then low heat (so it will cook in the middle), and take out the extra butter before you put the egg in. Just use enough to make it not stick, not to flavor it.

I've also tried sauteing all the veggies first, taking them out, putting the egg in, adding the cheese then the veggies back on top right before you fold it over. I fold mine then turn it over to cook more. I'm sure it isn't supposed to be done that way, but I can't take anything runny in it and the cheese makes it have 'that look' .

Hell I dunno you can try it, mine usually suck though :)

The trick to frying eggs is to cook on med heat, and when stirring and/or turning them over, do so gently. If you're rough with them they'll come out hard.

easiest way is to use a large fry pan. beat two eggs with some milk. heat the pan to medium-high and pour the beaten eggs in. they'll cook without you having to use a spatula to move uncooked egg to the sides. Once they're cooked through, takes about three minutes, put your fillings on one half and fold the other half over. slide the omelette onto your plate.

The easiest thing to do is to not bother making one at all.
